Dr. Maria Ortiz is a Postdoctoral Research Associate at the Functional Food Lab of North Carolina A&T State University, specializing in the development of healthy, high-fiber bakery products. Originally from Spain, she earned her B.S. and M.S. in Chemical Engineering from the University of Santiago de Compostela. In 2014, Dr. Ortiz began her Ph.D. in Applied Science and Technology at North Carolina A&T, where her dissertation focused on the creation of high-fiber bread using corn bran and oat beta-glucan. . Dr Ortiz runs the popular Instagram page "All You Knead Is Bread” where she illustrates the fascinating science behind bread chemistry and her delectable sourdough recipes.
